Curly Kale Lemon Bowl

For busy days when you need something quick and healthy, this recipe takes no more than 10 minutes with little cleaning up! Spinach and kale are packed with nutrients and vitamins, and microwave rice makes this one-pan recipe a breeze for those hectic days when you don’t feel like cooking.

Healthy curly kale lemon bowl

Ingredients

  • Half a Lemon

  • Dash of Olive Oil

  • 1 Pack of Microwave Rice (for quickness)

  • 1 Handful of Spinach

  • 1 Handful of Curly Kale

  • Halloumi or Vegan Feta

  • Sprinkle of Salt & Black Pepper

    (Serves 1 adult)

Method

  • In a heated pan, add the olive oil and lower the heat

  • Then add your spinach and kale, sautéed to preference – I like mine with a crunch!

  • Push the spinach and kale to one side of the pan, add the halloumi to the other side and fry to taste

  • Add your rice - I add it straight from the pack and cook this all for 5 mins. 

  • Then add your salt and pepper to taste - then half a lemon, for your dressing!

  • Quick, easy, fresh and delicious!
